I make the eggplant enchiladas almost the same way as the above moosewood recipe, except no almonds or green peppers.

I steam the diced eggplant a bit first, blot, & then add to the onion mix to saute until tender.

Also, I don't moisten the tortillas in water. I either soften them in hot olive oil or in my hot chile rojo sauce.

Instead of putting the cheese in the sauce, I add the grated cheese (I use rice, almond or soy) when I stuff the tortillas with the eggplant mix, just before rolling. I save some of the grated cheese to put on top of the sauce.

Have fun experimenting!

Quality vegetables from Pictsweet, a family owned, family run frozen vegetable company.

My lazy way...buy a bag of above mix. Soften corn tortillas in microwave. Put veggie mix in tortillas. Top with enchilada sauce, canned. I put cheese on mine. Pop in oven or microwave until bubbling. Top with olives and cilantro.

Those frozen bean/corn/pepper mix look like the perfect filler. I would certainly use those! Great idea!
