Anyone have any suggestions? A good friend of mine (who can't cook to save his life) has asked me if I'd be willing to play personal chef for the evening. He has a romantic evening planned for his GF, and I'll be slipping out shortly after serving dessert.

Only problem is, she's a vegetarian. And most of my impressive/romantic/dinner party appropriate, tried-and-tested recipes are not. I don't have terribly much time to experiment with recipes, so if anyone has any ideas to recommend, I would appreciate it. Hopefully, I can test out a few recipes this week and weekend.

She does eat dairy, so that makes it a bit easier. No food allergies. Desert won't be a problem, and I can think of ideas for appetizers... just stuck on the entree. Everything I can think of just doesn't seem special.

It's hard to go wrong with eggplant parmisian, spinach lasagna, or tofu enchiladas with a large veggie salad.
Ooooh and strawberry something for dessert.

Eggplant PARMIGIANA.
Spinach salad ..with facos?
Super Tuscan red wine.
Espresso coffee.
Chocolate fondue with fresh fruit to dip.

How about bell peppers stuffed with mushroom asparagus risotto and plated in a pool of red sauce? easy enough to do the main parts well ahead of time and then reheat covered in the oven. It will make a nice presentation.

I'd also consider something like penne vodka or a nice lemon or mushroom risotto or asparagus quiche. I make vegan versions of these that are simple and tasty, but they can be presented in a way that makes them seem a little more fancy than everyday dinner.

I say, go with a pasta, and veggie sauce, or rich Alfredo sauce, sautéed veggies on side.

I would start with a nice lentil soup with potatoes, carrots, celery and onions.

Then a light salad of cucumber slices, ripe juicy tomatoes, thinly sliced yellow onions, sprinkled with firm tofu cubes and served with a balsamic dressing. Topped with freshly ground pepper and a garnish of fresh parsley sprigs.

For the main course, cheese and spinach stuffed Portobello mushrooms served over pasta. Vegan cheeses can be substituted instead of the animal derived cheeses.
