I have multiple side dishes and a main dish. This year we are hosting some non veg*n guests so I'm also making something for them.
I'm serving 2 Tofurkey roasts - one baked in the oven and the other cooked in the crock pot with a cranberry sweet and sour glaze. The other entree is eggplant parm.
Sides include string beans almondine, mashed Yukon gold potatoes, savory chili roasted sweet potatoes, Brussels sprouts, mashed turnips, green salad, stuffing and home made cranberry sauce with Cointreau.
Yes I make a lot! My family like to try a bit of this and a bit of that. We also adore left overs.
^^^^^^ Although I eat meat, if I were your guest I would be happy to eat whatever you are serving; I would not feel like some kind of meat would be required. In fact, I would find it interesting to experience a complete vegan meal and would look forward to it.

We're making this, this year: Vegetarian Portobello Wellingtons | Delicious Dishes Recipes ... along with many of our families' traditional side dishes - stuffing, sweet potato casserole, etc., and an array of my spouse's family's traditional desserts - pecan pie, most notably. We were nervous about it, since this is the first Thanksgiving since we became vegetarians five years ago that we're having guests (we're inviting those members of our church who have no family to share the holiday with), but so far those joining us seem quite interested in sharing our vegetarian Thanksgiving.
I am fixing for both myself (vegan/gluten free) and family (regular). They will get all the traditional stuff, but here's the menu plan:
Turkey, stuffing, giblet gravy, mac & cheese (all for the regular)
Roasted acorn squash with an apple but stuffing, vegan mac & cheese (for me)
Vegan mashed potatoes, green beans, roasted potatoes, carrots, onions, celery and brussel sprouts, cranberry fruited jello/salad for all
vegan apple pie (for me), 2 pumpkin pies for family
Water/tea/kool aid for drinks.
We're making a vegan Thanksgiving which will be (if all goes according to plan):
-A Field Roast en croute Celebration Roast (the only store-bought item)
-mushroom gravy
-oven-roasted rosemary potatoes
-coconut milk sweet potatoes
-fresh cranberry sauce
-roasted Brussels sprouts
-a kale/apple/beet salad with fennel (maybe some goat cheese for non-vegans to add to this)
-also maybe an apple pie
The best main dish for a vegan Thanksgiving is baked acorn squash, stuffed with either savory beans and rice (especially flavored with sage and walnuts) or orange juice, cinnamon and apples.
