I'm really not a big fan of tofu. So for me, the best use of tofu is in miso soup.

The folks at Seasons 52 do a cedar plank tofu which is passable, and given how incredibly great their other vegetarian selections are the fact that this is just "passable" informs me about just how difficult it is to really do anything decent with tofu.

But heck, I'll be happy to see if anyone can post an interesting tofu recipe, better than any of those in the previous tofu thread: //www.city-data.com/forum/recip...ring-tofu.html

I love tofu as well. Hard to come up with a favorite but let me give you two:


Curry Tofu and Basil Spring Rolls

1 pkg of firm tofu
1/2 cup peanut or vegetable oil

1 tablespoon curry powder

1 teaspoon cumin

2 cloves garlic

5 tablespoons soy sauce

2 teaspoons salt

2 teaspoons fresh ground black pepper

1 teaspoon sesame oil

lettuce

fresh thai basil

cucumbers

rice paper

1. Drain tofu and blot dry with paper towels to remove excess moisture. Slice into about 1/4” pieces.
2. Wash basil, lettuce and cucumbers. Slice cucumbers into matchstick sizes.
3. In large plastic freezer bag, combine crushed/minced garlic, vegetable oil, curry powder, cumin & soy sauce, salt, pepper and sesame oil. Mix the marinade well, then add slices of tofu in bag. Lay tofu slices in gently on top of each other so that they don’t break. Make sure all marinate coats each slice of tofu.
4. Let marinade for at least 1 hour or until all tofu slices soak up the marinade.
5. Heat up frying pan.* Do not add oil to the pan because the tofu is well oiled. Fry slices of tofu until both sides are golden brown with a nice firm crust.
6. Allow tofu to cool, then slice into 1/4 ” strips.
7. In large bowl, fill with warm water. Quickly dip each rice paper in warm water for about 2-3 seconds.
8. Make sure rice paper is completely hydrated and softened before rolling.* Assemble rolls.


Crunchy Chocolate Truffle Pie
*
1 cup semi-sweet chocolate chips
1 12-oz. container firm silken tofu
1/2 cup pure maple syrup
1 cup creamy peanut butter
1 9-inch pre-made graham cracker crust
1/2 cup chopped chocolate-covered pretzels

1. Place chocolate chips in microwave-safe bowl, and microwave on high for 30 seconds. Stir chocolate, and heat 30 seconds more. Repeat heating and stirring until chocolate is just melted. Set aside.*
2. Combine tofu and maple syrup in food processor, and blend 3 minutes, or until smooth. Add peanut butter, and process until smooth. Add melted chocolate, and process once more until smooth.
3. Pour peanut butter-chocolate mixture into pie crust, smoothing the top; refrigerate 20 minutes. Sprinkle pretzels on top, and serve, or refrigerate until ready to eat.

Slice it thin, fry it in olive oil, butter , or margarine, salt and peper to taste and eat it on a "TLT" sandwich. If you can't do the mayo try some guacomole spread and bean sprouts to give it a protein boost.

My favorite way to have tofu is also simple and versatile. Heat a tablespoon or two of oil in a skillet, add cubed tofu, and pan fry, stirring occasionally until tofu is browned on all sides. Sprinkle liberally with salt, pepper, and garlic powder and enjoy plain, or add to stir-fries, soups, pastas, pilafs etc.

Our favorite easy way is tofu fajitas! Stirfry tofu cubes, sliced green peppers & sliced onions. Serve in warmed tortilla with salsa.

For new years day dinner I made tofu enchiladas with chile verde... delicious!

I don't like to cook and can't stand following recipes, but I occasionally have a tofu scramble with a bit of curry powder. It looks like scrambled eggs.

The beauty of it is that it's incredibility easy to make and you throw whatever other veggies you want into the mix.

Also not a big fan of tofu, but do enjoy a good tofu scramble. You can buy the mix sold by Fantastic Foods and add extras like corn and diced zucchini to it, or make your own from any number of recipes online.
