That is absolutely hubby's very favorite and we go light on the olive oil. He loves it on a plain green salad (spinach) with only parm cheese and because, we are not vegetarians he also like bacon bits on top.

Another one I made last night that was really good:

a little olive oil
sesime (spelling) oil: go light
lemon juice
soy sause
spicey mustard
a little garlic powder
a little pepper
just pour the ingredients into a bottle and shake til the mustard is mixed well.
We had a jar of mustard that was almot gone, so I used that.

I've got a simple one I use now.

A tablespoon or so of olive oil based pesto, a tablespoon or so of tahini or greek yogart or whatever, a splash of Bragg filtered organic apple cider vinegar or balsamic or whatever, a tiny bit of 100% pure maple syrup to sweeten, and maybe a squeeze of lemon or lime.

Here's a simple one I use occasionally. I don't measure it but, will try to here:
Maybe one third cup salad dressing or mayo
half as much yellow mustard or less
sugar to taste, probably a tsp or less
enough water to thin it to salad dressing consistency
