I have an amazing quick little meal I've been making twice a week ,it takes about 5 mins it's my ultra healthy version of ramen/two minute noodles.Tho I do not use those noodles.
Total cost of meal is around three dollars with the extras.
Buy some :
Vermicelli (Rice Vermicelli) noodles
coriander Americans call it cilantro
Tomatoe sauce(organic I use) Americans call it ketchup.
Soy sauce
Sesame oil
Optional:
Spinach ( I buy a pack for two dollars)
Tofu ( I just buy a ready made pack for 5 dollars)
Put your serving size Vermicelli in a bowl,put kettle on,pour boiling water over the noodles let soak for five mins.
Put in strainer.
take out add the coriander,splash or two of soy sauce,splash of sesame oil and two teaspoons or so of ketchup,sounds weird tastes nice.
Add tofu,spinach.
The first time I made this it tasted a bit odd but once you add the flavours right or to your liking it's really nice and better with the tofu and spinach.
( No additives,frankenfoods,powder packets,etc like ramen )
Just yesterday I made a vegetarian Cuban sandwich. And it tasted just like the last time I had one, which was awhile.
May I ask what you used for the "meat" in the Cuban sandwich? I am not sure I've seen a meat substitute that is shredded--am I correct Cuban sandwiches traditionally contain shredded meat?
1 can garbanzo beans, drained
2 apples, skin on, chopped
1/2 handful raisins, chopped
2 ribs celery, chopped
curry powder to taste
lemon juice, just enough to moisten
pinch of pepper
BURRITOS
Tortillas or lawash bread of your choice
refried beans straight out of the can
any salsa you like
(optional) shredded cheese
(optional) cooked rice, especially Mexican rice
(optional) chopped peppers or onions
Spread the beans on the tortillas with a knife. Add a drop of salsa, a spoon of rice, sprinkle of veggies, and/or cheese as desired. Roll those suckers up and stick 'em in your pocket.
I use rice paper sheets and soak them in hot water while I julienne some carrots, english cucumber, bean sprouts, cilantro, mint and thai basil. For a dipping sauce I've used a little Sambal and soy sauce with minced ginger, or a sweet chile sauce. Peanut dipping sauces are great too.
I've made these for my daughter on the fly before she had to go to work. They are quick, easy and delicious!
Chickpea salad sandwiches! Or you can do it with tofu. I make sure to add celery and pickle to mine with mustard and a touch of mayo. I also will make a big pasta or rice salad and eat for lunches. Ina Garten has a great brown rice salad. Tomato and mozz sandwiches or salads. I round everything out with raw veg and hummus.
I never thought to add pickles to chickpea salad. I add carrot and onions to mine.
Stuff a pita with sweet red pepper humus, Pepper Jack cheese lettuce,tomato slices and alfalfa sprouts.
Enjoy a veggie Ruben -two slices of Jewish Rye bread,spread with Russian dressing,Swiss cheese, smoked bacon style tempeh or Tofurky Roast beef slices and Silver floss sauerkraut. When sandwich is made brown in a frying pan with butter or earth balance.
Everything can be made vegan by substituting vegan cheese.Make your Russian dressing with Vegenaise.

That's correct. I used Tofurky Smoked Ham. For the shredded meat, seitan could be used. Seitan can be shredded and chopped. It is very versatile and can be compared to pork. Not to mention it can also be homemade.
