I always make vegan "filet mignon" every year. Takes all damn day to make, so it's a rare treat.

Bake acorn squash as usual, and stuff with apples, cranberries and walnuts; brown rice cooked in allspice and cinnamony orange juice; chestnuts and apples; or just long grain and wild rice. Meal in itself.

The original recipe is lost in the dark reaches of the internet, but this is almost identical. The only thing I go differently is I use tapioca instead of cornmeal. Not tapioca starch, but the whole tapioca pearls. Sublime; not the slightest bit rubbery or chewy.

Vegan herb, vegetable, dried cranberry and pecan, sausage stuffing.

Vegan roasted root vegetables.

Glad somebody revived this.

I have to think about what to bring to my mother's for Christmas. She is not a vegetarian, and anyway, she is on dialysis so she has to eat meat--they keep telling her to eat more meat, as a matter of fact.

I have two brothers who will be there, and they are meat eaters, but I am vegetarian and my daughter is vegan. Might do the lentil loaf again, and then we can all have the same side dishes.
