Homemade rice milk

Heat leftover rice with milk/plant milk, shredded coconut, raisins or chopped dates, cinnamon, sugar for a breakfast treat.

mixed cooked/cooled rice with peanut butter and honey or brown rice syrup and shape into balls. Store in refrigerator for a few hours, and eat as a treat on the go.

Add to smoothies and blend for a creamier richer smoothie

I add rice to refried beans to make a burrito, or use it for Spam & egg fried rice.

I don't know if that applies to vegetarians

I love my pineapple fried rice. Snap peas, onions, pineapple, rice, seasoning packet and soy sauce. YUM!

I thought the same thing. But maybe there's a soy version available. Then again, spam is highly processed, and soy in large amounts is bad for men, because it raises estrogen levels. If I were a vegetarian/vegan, I'd go with seitan or quinoa, or simply good old mushrooms.

Bibimbap. Any number of vegetarian ingredients can be added, including tofu. If you eat eggs, add a fried egg on top for a rich treat. Bibimbap is one of our favorite meals when we have our occasional meatless nights. We add carrots, onions, mushrooms, zucchini, spinach, and bean sprouts, but the possibilities are endless.

Thank you for sharing these recipes. I also like doing a lot of meals using cooked rice. It feels like anything can go well with it.

The very basic would be fried version with onions and garlic. It goes well with fried egg in breakfast. Whenever a get extra time, I get creative with rice recipes like making skillets, enchiladas, casseroles and rice bake.
