In Spain, they eat a delicious lentil and chorizo dish. I think there are carrots, potatoes and onions in it too.

Fresh hot home baked corn bread with a big slab of butter melting on it.

I like to bake cheddar cheese and diced jalapeños into corn bread.

You could modify this with soyrizo, I imagine (since this is a vegetarian forum)

I serve with lentil soup either basmati rice,naan,chapatis/rotis,flatbread,bread or bun and mixed raw vegetables,plain yogurt.

You could throw in chickpeas, white or sweet potatoes or butternut squash, cauliflower, some tomatoes, a few wilted greens like Swiss chard or collards, and top with a dollop of soy or coconut yogurt. Or instead of potatoes/squash, use chunks of carrot. You could also stir lentils into hummus and scoop that up with the usual pita bread.
