For artichokes you can use hummus as a dip or you can make a plant-based mayo without oil. There's a recipe on the Clean Food Dirty Girl website for vegan mayo using tahini and cashews (and it's delicious!). Lots of great recipes on her website/blog. All her recipes are no oil and you can easily eliminate the salt in her recipes if you're avoiding that as well.
