There are basically two things I use the food processor for: nut butters and cauliflower rice. If I didn't eat those things, I wouldn't find it necessary to have, but that's just me.
We do a lot of dishes with quinoa and/or lentils and/or legumes and we found the recipes by putting those ingredients into the search engine. None of them require a processor, and we often have leftovers. Good luck!

I am vegetarian since birth and never owned a food processor. You don't really need one. However if you just need it to chop veggies for salad, I would buy cheaper ones which are around $20 or so.
In terms of recipes, even though almost every cuisine have some veggie items, me being an Indian I can suggest you to search for Indian vegetarian recipes on youtube. I get my nutrients mainly from fruits, veggies, beans, legumes, nuts and some from dairy.
I used a very small one when I prepared my son's baby food.
