We need to define "healthier" to even start the comparison. Are we talking calories, fat content, glycemic index, possible parasites, susceptibility to bacterial growth,,,? BTW, the act of processing doesn't necessarily reduce the healthiness of a food product.

My favorite jar pasta sauce, Mid’s, has a ‘Plant Protein-Sausage Style‘ variety. It uses peas. I haven’t tried it, but I’m planning to, out of curiosity. I bet it’s good.
