Looking forward to finding a good navy bean soup w/o ham (developed a sensitivity/allergy to ham) - but that was always my favorite soup. Black bean soup recipes would be great too.
My best friend passed away when she was only in her thirties. This was her recipe for Ham and Bean Soup. I have her hand-written recipe and it ends with "If you have any questions, call me".
One ham bone
A pound of mixed dried beans (whatever kind you like). She used Lima, navy and great Northern.
4 cloves garlic (minced)
2 onions chopped fine
4 carrots or more sliced
4 potatos (or more) cubed & peeled
6 slices (or 8) uncooked bacon but into 1/2" pieces
1 Tablespoon chopped parsley, pepper to taste
1 can tomato soup (use 3/4 or whole thing)
3 ribs celery
Soak beans overnight. Next day, drain water. Pleace beans, ham bone in a large pot and cover with water. Bring to boil and cook for one hour. Add rest of ingredients except carrots & potatos and cook for half an hour, then add carrots & potatos and continue to cook until tender.
This is crazy delicious. Obviously if there's a little ham on the bone it just falls into the soup : D
My first job at 16 was in an Italian restaurant. My favorite soup was the minestrone: cooked white beans, sometimes kidney beans, carrots, green beans, celery, onion, tomatoes, some spinach or cabbage, spices and herbs and pasta all cooked in a broth topped with fresh baked croutons and Parmigian cheese. If you have a Parmigian rind, toss it in the soup. It gives it extra flavor. One could make it with veggie broth.
You might try split pea. It's traditionally made with ham, but you can use a veggie broth base instead. I think it would be pretty good.
Veggie chiles are easy to make. Follow a typical chili recipe and leave out the animal protein. I've read recipes using tofu cubes. Not my thing, but others might like it.

This one is delicious! I must admit, I use canned Navy Beans (organic) makes it sooo much easier. I think I'll make some this weekend.
