So the other day, I realized that I don't have a good, basic tofu and brown rice recipe. Now I feel like I am lacking as a veggie cook!
I had an especially good bowl at a veggie restuarant in Burlington, VT when I passed through there two years ago.

Does anyone have a good recipe they would like to pass on?

I don't really do recipes, but I would just toss them (rice already cooked) in a wok (or big pot) with soy sauce, olive oil, and basil, or soy paste and simmer on high. Throw in some broccoli toward the end with the cover on and steam it.

I did a similar method (I didn't think of the miso, though--that might have helped) last night. I tossed the tofu cubes with a combination of broth, Braggs, dry mustard, ginger and baked it till only slightly chewy. I cooked the rice with broth, then added in the tofu, some pepper and some fresh thyme. It was okay, but bland. Definately not comfort-food, though. I am going to try "Brown Rice ala Hippie" out of Cresent Dragonwagon's Passionate Vegetarian. I have my meals planned for awhile, so I won't try it for awhile, but when I do, I will post my results.

Just mixed the leftover so-so tofu and rice with leftover so-so vegetable soup... two blahs make a yum!
