All of these are WONDERFUL! I may not be able to do anything with falafel...they both go to American University in Cairo right now and they are burned out on middle eastern food...I can understand.

Keep them coming. You all are great!!

Papaya and cheese quesadillas are really tasty. Cut into wedges, with some quacamole and salsa for dipping.

Or refries and cheese. Or onions and cheese. .. mushrooms, etc.

Papaya and brie go well together, with a little fresh cilantro.

Spring rolls
Bouchees (pronounced boo-shay) - they are bite-sized baked puff pastry shells stuffed with whatever you like, e.g., cheese, creamed vegetables, creamed seafood, olives & garlic, anchovy paste, etc.

Bite-size pesto pizzas are really good, made from pizza dough.

Bake with a pesto topping and a little monteray jack. yum.
