I'm one of those people that sometimes gets on a 'kick.' My current passion is kale. I've been making kale chips, using kale instead of lettuce in my salads and wraps, and seasoning and steaming it for a side.

What's your current passion?

fresh basil....

stir-fried veggies with fresh basil & soy sauce thrown in at the last minute.

Right now....I'm getting back into cooking fresh hot cereal with flax seeds, and a side of orange juice.

OK, I will admit it. I am stuck on SoyToo whipped cream in a can. OMG, it's so good....I bought it tonight to use on graham crackers. WTH ~ That's no longer a passion; I am apparently wanting to turn myself into a huge blimp!

Cauliflower.
What an amazing veggie!

Stands in for starchy stuff like potatoes and pasta in casseroles and soups. Amazingly creamy when pureed.

Works raw dipped in hummus and dips. Has the crunch of crackers or potato chips without the fat or calories.

Plays well with broccoli and many other veggies.

Oh, yes, talking about veggies....this past summer my absolute passion was red peppers. Perfect snack food, delicious raw and when it's fresh it smells so healthy!

plaidmom...I've never tried to puree cauliflower, but as a veggie, I love it. Do you have any quick recipes for cauliflower soup that are favorites of your's? Easier the better...

Salsa. Mmmm, salsa. I'm to the point where I think I could probably cut out everything I put it on and just eat it from the bowl with a spoon. I'm hoping to can my own this summer!

I just use it to replace some (or all) of the potatoes in "potato leek" soup.

Basically, just chop everything into the same size, toss everything in a pan with some oil and/or butter, cover with water (or homemade veggie stock), season to taste, cook til mushy and puree with a stick blender.

I serve mine with paprika and cracked black pepper.

I'm with you! Sometimes when dinner is cooking I have been known to eat salsa straight-up with a spoon.

Anyone on a hummus kick? I bought a huge container from Costco and started putting it on everything. I even dipped my slice of veggie pizza in it when no one was looking!
