some people's definition of "vegetarian" can be pretty murky, but if a person's asking for vegan recipes/food, you can be pretty sure that they don't eat eggs.

you can definitely make gnocchi without egg, although it is traditionally used. there is a good cookbook by bryanna clark grogan called nonna's italian kitchen that has lots of vegan pasta recipes, including gnocchi. incidentally, her recipe for ravioli pasta would probably work for pierogies. at least that'll do til someone does a vegan polish/eastern european cookbook!

True. My son is a Vegan so most pierogies which are made with noodles that contain eggs are not OK regardless of what they are filled with.

I like us to eat as a family and to continue traditional foods that we have enjoyed as a family as much as is possible. Pierogies, stir fried cabbage with caraway seeds and tofurket kielbassa were a family favorite until my eldest son turmed vegan.

Still a great hearty vegetarian menu for non vegans!
