The only two that I know of are along the lakefront in Burlington, and a friend just told me about one near Lake George village(Not VT, but close for some)

Stowe has a great paved path thats worth checking out if it's not out of your travel range.

I agree with both Burlington waterfront and Stowe. Stowe is 11 miles round trip with many places to have picnics. I took my kids there when they were young even when they used a tricycle... (no they didn't do the 11 miles on their tricycle).

The Stowe path is really nice and you can get the map for it online. However, it can a get busy which while trying to bike with kids could diminish the pleasure element. I head over a few times a year and in the morning I have found it to be the best for low traffic. Don't really know of any paths in central/southern Vt, but there has to be biking/recreation trail guides out there which may have info on that.
