The greatest use of music/sound I've ever seen in a game was Left 4 Dead 2. It's soundtrack created a strong atmosphere (especially around its Deep South setting), but the game also uses creative jingles to subtly warn players of incoming zombies that increases the pressure but doesn't break immersion.
These are the soundtracks at the beginning of each campaign. Really gives an idea of what that campaign is all about. I especially like the last one- the final campaign takes place mostly in the French Quarter of New Orleans, and the music resembles one of those slow-moving jazz funeral marches.
Ori and the Blind Forest has some real nice music.
