I've always been a fan of stealth in videogames. I just love the rush of being able to sneak into an area, choke out enemies, and leave without killing anyone or raisin alarms. I have a lot of patience and can sit and wait in a hidden spot until the moment is just right to make my move.
Some games have an option to do stealth or go guns ablazing and destroy everything.
I like a mix leaning towards the guns blazing side. I'm bad at stealth. I lack patience, but I do like it on the rare occasion where I can clear the enemies without being seen. I like games like Far Cry 4 where you can start stealthy & if cover is blown then bring out the big guns & still usually clear an area.
Which ones involve a lot of stealth and snipering?
The whole Splinter Cell series is basically about stealth, and I'd say the Ghost Recon series is about stealth also, neither are very sniper driven. It's more about strategy and planning.
I'd say a mix of both is the best. Only shooting or only crawling behind boxes.. can get rather tedious after a while
Dishinored was a great example - you could do one, the other or a bit of both.
I like Sniper Elite 2 - 4 and Sniper Ghost Warrior 1 - 3, as I like playing the Army's deadliest weapon!

It's an M777 155mm Howitzer, no not the AH-64D Apache Longbow, because the AH-64D is a platform not a weapon. Check casualty counts from every major war since WW1, you'll see that 70+% are from Artillery and explosives (bombs, grenades, mines, HE Tank shells) only around 5% are from small arms (of which only a tiny fraction are sniper kills, because small arms includes mounted machine and chain guns)

Personally I'm predominantly stealth in VG's, mainly because when people shoot at me I die a lot, so I try to avoid it whenever possible. That said playing as Salvatore (the Gunzerker) in BL2 is intensely gratifying.
Depends on the ambiance, gameplay and, details in the game. In Fallout NV, the details make me wanna go stealth add in that some enemies kill you quick regardless of gear, it makes you -feel- the need to be sneaky. Fallout 4, same series oddly enough, they changed the mechanics such that you can go up to a Deathclaw with a knife, fearlessly. Lv5 Ballistic Weave, some of which can be worn with armor, combined with Dense (explosion damage greatly reduced) mods makes it so you can waltz into heavily armed super mutant camps (Big John's Salvage, et al) like walking into your own house.
