Penrith, actually, though I'd certainly be happy in Sydney's excellent climate anywhere.

Camden. Quite dry, much warmer in summer than central Sydney, but a decent chance of frost in winter.

Penant Hills, for being a bit warmer in summer than Sydney, but getting its fair share of the thundery showers in the summer.
