Early May is still slightly 'summer-ish' for snow in Central Europe (apart from the mountainous areas). And late May is still mild and slightly cool for heatwaves to occur in that region (there's actually much more chance for that in early September).
Okay, if I had to guess - Since late May is closer to the summer than early May is to winter, then I'm gonna go with late May seeing 30C weather.
Snow in May, in Hamburg? Probably once every 500 years.
30C in May? Probably every 20 years or so.
I don't think it is 'far' more likely, only slightly more likely. It has happened on occasions throughout the last century. Hamburg is farther north than London, and 30C here is only slightly more likely than snow, despite us having warmer record temperatures than Hamburg
