I feel like both states would feel very similar in summer.
Missouri heat isn't as dry as Arizona heat, but it's drier than Georgia heat. You have to remember that heat waves in Missouri often originate in Texas and the southern Great Plains, which is a more "continental" heat than the Deep South gets. If Missouri heat was was as humid as Georgia heat, then Missouri's historic maximum temperature wouldn't be 118°F. Here's a list of historic maxima by state:

120°F - Arkansas
120°F - Oklahoma
120°F - Texas
118°F - Missouri
115°F - Mississippi
114°F - Alabama
114°F - Kentucky
113°F - South Carolina
113°F - Tennessee
112°F - Georgia
112°F - West Virginia
110°F - North Carolina
110°F - Virginia
109°F - Florida

Notice how the maxima get hotter the closer a state is to Texas, and the farther it is from the Gulf of Mexico and the Atlantic Ocean. That's because the heat is drier.

A bit idiotic using record highs to show average conditions. Heat waves in Missouri originate in Texas just as often as they originate from the Gulf of Mexico. There have been 80 F+ dewpoints in Missouri these past couple days. Obviously the record high will be higher because of its continental location. Missouri may be less humid than Georgia, but it's still a humid heat.

I never noticed it in the south either. Our grass is more lush and the soil is different, maybe it gives off moisture?

Yeah, but I've experienced heat in a lot of places besides the South. Never felt what you're talking about.

Average Dew Point in St. Louis in July: 66 F

Average DP in Kansas City in July: 66 F

Average DP in Springfield, MO: 66 F

Average DP in Atlanta: 68 F

Average DP in Macon: 70 F

Savannah: 71 F

Not that much of a difference, seems like central and coastal GA are a bit more humid. The difference between 66 F and 68 F or 70 F is basically nothing though. I don't think I could notice the difference between Atlanta and St. Louis in July. One thing MO gets more however is more breaks in the heat and humidity than GA. That could probably attest to the very slightly lower dew points.

73°F now with a dewpoint of 69°F. Forecast low is 63°F. Seems unlikely

You can tell the difference between a 66 F dew point and a 68 F dew point?
