Do you prefer the stable, almost frost proof winters and generally just lukewarm summers with the potential of extreme heat waves?

Looking at the chart, I would take Melbourne, although I never been there. Mobile, where I live is fairly close, but it has cold winters. To get away from winter here, one needs to be in Southern Florida. Summers in North Alabama are more to my liking, hot, but less humid.

Yep. In Australia, it's a battle between a hot interior and cold ocean, hence the variable summers.
In North America, it's a battle between a cold interior and a warm ocean, hence the variable winters.

Australia often wins battles vs the US south, but it will be interesting to see how the battle goes if it's worded like this. Australia has extreme variability too, just in a different season.

There's also that Melbourne is at 37°N while Mobile is at 30°N. 30°N in Australia won't be as hot and humid as Mobile, but still have rather consistently warm summer with a warm ocean nearby:
