I hate cold nights and hot days, or cold nights and cold days, or hot nights and hot days.
My ideal temperatures would be warm (not HOT!) during the days (around 75°F) and slightly (but only slightly) cooler at night (around 70° F), year-round. Is there a place on earth close to these ideal temperatures? (with dry, sunny weather to boot?)

Sounds like you might want moderately-high altitude tropics.
Under 5000 ft, but above 2000 ft perhaps?
I'm not sure if you can have 75 F days and 70 F nights, year-round though.

If you don't mind desert, check out the Pacific coast of South America.
The water's cold so it makes the air surprisingly cool for its latitude.
Galapagos Islands?

Anywhere along the Peruvian or Northern Chilean coasts like Lima Peru or Arica Chile would be a good choice as ColdCanadian says...San Jose, Costa Rica (3000 feet) is a good spot for places that are slightly higher altitude for the tropics and are therefore a bit cooler than the lowlands.

Yes Lake Chapala or the middle elevations of Hawaii are good choices...

Anywhere along the Peruvian or Northern Chilean coasts like Lima Peru or Arica Chile would be good choices also as ColdCanadian says...San Jose, Costa Rica (3000 feet) is a good spot for places that are slightly higher altitude for the tropics and are therefore a bit cooler than the lowlands.
San Diego is also a good choice too but gets a bit cooler in the winter than those Latin American locations I mentioned.

Even in mid-summer, San Diego averages lows of 65 F.
In winter, lows are in the high 40's F.

A far cry from the 70 F year-round lows OP hoped for.

The problem is, most areas that are dry and sunny experience large amplitudes between day and night temperature. This also applies to high altitudes. Mexico City, for example, gets pretty chilly at night.

I think you need a coastal or island location at low latitudes where cold currents keep surface temperatures low. Coastal Peru and Ecuador probably fits the bill. Galapagos and Canary Islands would be OK too.
