I like 'em raw or pickled. Cooking them kills the flavor.

Ramps are so important...they need to have their own forum. This is the test of the real West Virginian....Do they grow anywhere else in the USA?

According to Wikipedia:

Wild leeks (Allium tricoccum), also known as ramps or ail des bois (french), are a member of the onion family (Alliaceae). Both the white root and the broad green leaves are edible. They are found from the U.S. state of South Carolina to Canada and are especially popular in the cuisine of the US state of West Virginia and the Canadian province of Quebec when they emerge in the springtime. A common description of the flavor is like a combination of onions and strong garlic.

On the other hand, I've never found anyone who wasn't a West Virginian that even had the slightest clue what a ramp is.

"wings in the woods or bush-wings...to translate...and the green leaves do resemble little wings when you see them in the soil.
Makes me think that spring is just around the corner...3rd week of Feb...Where did all that winter go...
Didn't know that the Rampion of Champions grew as far south as South Carolina...
I wonder if a scale exists to measure the strength...like the heat scale on hot peppers...
Ramps are in an "Other World" class.

In the US, no, I don't know of many others outside of WV that enjoy ramps. I do know, however, that they are wildly popular in various regions of Italy.

If its a rainy day and you want a place to hangout...try Tamarac.
Nice place to lunch as the some of the staff come over from the Greenbrier to do the cooking.
Walk around and see the incredible talent that is West Virginia. Showcased and for sale are items of our rich country culture.
Bronze sulptures, paintings, books, quilts, Muzzleloaders, carpentery and arts and crafts of many descriptions.
One of my very favorites are the glass displays...and Ron Hinkles work is very good.
Ron is Buckhannon born and bred...his company is Dying Art Glass; if you want the website...just browse.
We get many of our Christmas gifts from Ron...

The Fenton people have been inviting West Virginia glass vendors in to meet their commercial customers. They didn't have to do this, but it shows the great character of a great family. To much glass from China....just like 1730...deja-vu.
