I'm considering moving to Bronxville and will be commuting to NYC via train sometime around 7:00am M-F give or take a half hour. Is it a challenge to find a seat on the train during this time or will I be forced to stand often?

Not hard to get a seat going into the city during the morning rush hour, depending on which car you get on. I've found the first and last cars have the most seats available during peak times.
Going home from Grand Central if you get to the platform ~20-25 mins before departure you'll have your choice of seats since trains don't get that crowded once they open the doors.
