We're staying at The Grove Park Inn.
Any must sees or do's while we are there? We'd love to checkout the Candelight Christmas at Biltmore.
We live in Florida and would love to do "winter" activities (most of us have never seen snow)but it seems there is no ice skating and tubing does not start until December. Any ideas?
Won't likely find snow. You could try one of the ski slopes but unless its a cold winter like you said they won't start making snow. No skating since the civic center wouldn't pony up the money to fix the rink either.
GPI will have their gingerbread competition going by then and it's really neat to see all the houses. Biltmore and Biltmore village could kill a day. Both are beautiful for the holidays. If you are driving you could also take the kids to a Christmas tree farm to bring one home. (Sandy hollar in lesciester is a favorite). Ummm. Just taking a hike along the parkway in winter is beautiful with all the leaves gone. If i remember correctly the WNC nature center does a christmas theme thing. dont know if it will start by then but either way its a fun visit dor kids. Hopefully that's at least a starter list.
You won't see any snow in Asheville around Thanksgiving. I will probably be 35F or so at night and 55F during the day. You can forget seeing any snow in any ski area in NC. Banner Elk is at 5K feet and the weather there will be 5 or 6 degrees colder than Asheville.
On the East Coast, you would probably have to go to Newry, Maine where Sunday River Ski Resort is to see snow on Thanksgiving.

Biltmore is usually packed over Thanksgiving but a most beautiful and interesting place to visit. Grounds are wonderful too. Have a good visit in our area lots of fun stuff to do. Hope you get good weather it can really vary that time of year.
Agree on Biltmore Estate being full; OP should pick their 'day' and cop tix on line, soon. Spend the dough and get the audio tour deal. Grounds are nice, even that late in Nov, and if weather is decent it won't be cold/winter-like.
BRPkway is worth a half day, going north of A'ville, or south toward Cherokee. Casino in Cherokee, if that is of interest, and the Museum of The Cherokee Indian is very interesting and worth a couple hours, esp if weather is so-so. Museum of The Cherokee Indian, Cherokee NC

Hmmm.... we are traveling with kids, so it looks like Gatlinburg might be a better option and maybe do Asheville with just the hubby and I another time. Thanks for all of the info guys!

That is a place I would definitely not go to at Thanksgiving, nor would I go to Pigeon Forge. It will be mobbed; it's a shopping mecca, but really not much for kids to do. Lots of children's type activities are closed for the winter. Took my grandchildren there one year at Thanksgiving at the insistence of my daughter ... got caught in a snowstorm, nothing was open for kids, traffic was bumper to bumper. Went into one discount handbag outlet, and got an ice cream soda and headed back here to Hendersonville. Strongly suggest checking w/the Chamber of Comm. and the weatherman before you head up here.
