It's a PITA to get the interior of a raw bratwurst cooked through and not burn the outside of it. I got food poisoning as a teen from this. The brat was charcoal brown/black but raw in the middle. I have always simmered them in butter, dark beer, onions and garlic then finished them off on the grill. Less time on the grill makes the brat less likely to dry out. The beer also makes the sausage casings more pliable and less likely to split. When i'm doing 40-50 at a time for a party they go in the crock pot AFTER cooking with the same concoction to keep them warm. What say y'all???

Unless you are starting out with mostly frozen brats when grilling or the grill is too hot/flame too high, that should not happen.

Boil them BEFORE you grill. This means you are partially cooking them just before you grill. Now the grilling time is quicker and a lot less overcooked brats.

I don’t personally like to soak brats in a crock pot afterwards, but arguably for a larger batch (or party) where they all aren’t served immediately it sounds like a good plan.

We will cook our brats in the slo cooker in a bath of beer, butter and onions. Then just brown them on the grill. Quite tasty.

Another option is the Johnsonville grill which does a nice job cooking brats.

When I make brats, I do throw them in some beer for a while. I am not a big fan of brats and I'm even less of a fan of half-cooked brats, so I kind of like them overcooked. I probably shouldn't be in this thread.

When I grill the brats, I do it over indirect heat so I am basically smoking them. No flame ups, and they are cooked through, not burnt. Beer, butter, onions and red/green pepper bath afterwards.

No grill
Place brats in crockpot. Dump one 12 oz can of kraut over the top of them. Turn on low for 6 hours. Put in mouth
