Cosmetology...Depending on your program. My sister's program was 9 months I believe. They have a lot of job fairs and stuff. On the bright side it will never be outsourced. They really work with you too. There where a few pregnant girls in the program who graduated no problem.

Truck driving. The barriers to entry aren't high but the pay is usually pretty decent. Industry has a high churn rate due to non-typical working conditions so jobs are usually always available.

Now to answer your original question, what about security or medical assisting (dental technician, nursing assistant, physician's assistant, etc)? I don't know a whole lot about those trades, but they seem to be hiring more than others!

Certified nursing assistant is the only one that would take less than a year but the pay is really bad.

Dental Tech - 2 years needs an associate
Med Assist - 1+ year
Physician's Assistant takes a Looong time 4+ years they are similar to Nurse Practitioners in education level.
