I would like to leave on a good note, may want to come back some day. I don't think they'll walk me out the door though you never know these days. I have very good reviews and get along with everyone. Usually they take a while to hire new people but realistically, they can bring in a temp within a week if needed. Is two weeks really enough (which is the minimum they ask for in the employee manual) or would 3 weeks be better? I don't have a job waiting on me so that's not an issue. Thanks!!

If it is not an issue, why not give them 3? Certainly can't hurt and will give extra time for them to figure out if they can hire someone or get a temp.

2 weeks notice is fine.

They won't fill the position within the difference of an extra week.

They'll fill the position with a temp and take their time hiring a replacement.

none, take the extra time for yourself and enjoy some of life.
the company wasnt paying you for loyalty.
