Note that my general studies degree had a lot of sociology and history courses. I'm also a pharmacy tech, but I'm looking to get out of pharmacy if I can help it.
Pretty much any soft skill job that doesn't involve STEM like law or politics.
I don't see anyone with a general studies degree being courted for an engineering or scientist position. Perhaps someone that has job experience in those fields may have a shot despite the degree, but not in general I'd say.
Probably some GS-5 or GS-07 general admin type position. There is a ton of competition for Fed jobs. I tried during my last job search. 200 applications for chemist and related science position all over the country.

Yes. If that's your career goals then you will need the appropriate training. Once you have the training the most likely options would be VA and DoD just for shearn numbers. Most of the large agencies may have a few but those will be very few.
