I will say that Mexicans are pretty friendly people and they work HARD even if they know that they will get paid a small amount of $$ for it. Their work ethic is something to be impressed with.

I find the same thing in South Koreans.

Italians are extraordinarily sociable, open and endearingly loud.
The Greek are wonderful - extroverts with depth and soul.
Russians are amazingly soulful and compassionate (you can tell they've been through a lot), they love art (as do I ) and can be extraordinarily disciplined.
Asians are extremely well-mannered, polite, lovely and well-educated. They're also unimaginably hardworking and gentle.
The French are just, well, the French. Who doesn't know how graceful, stylish, proud and quirky they are?? As well as fond of the arts ... I'd certainly love to visit France one day. ^^
The Bosnians are probably the most genuinely generous people I've ever met. They'd give their life just to accommodate you and give you everything you need. You can always have a great time with them. Plus, their humour is hard to beat, really.
Germans, hmmm. It'd be difficult to describe them, suffice to say, I like them very much.
Finally, the British ... I love you! My dear God, I love everything British. Their tea habits, their biscuits, their accents, their wonderful history, their British character and their manners. Also, what I love about them is how deeply just, dignified and (sarcastically) funny they are. Also, they are incredible acceptant of any other culture as long as you respect the general rules.

I love diversity!
