I would say either Spain, Chile, Argentina, Uruguay, or Costa Rica. Some parts of Mexico and of Colombia are nice too...but as a country that cares for its people and have a stable and growing economy, I would stick to those I mentioned.

Funny to see everybody saying "Spain" because it's an european country.
FYI, Spain has terrorists that like to blow things up = ETA.

I recommend Venezuela because I grew up there and I've visited it several times since I moved away.
Venezuela is known for having some of the best highway system in Latinamerica,
add to that the fact that gas is $0.20 a gallon and you get
add to that that Venezuela is the size of Texas and Oklahoma and has jungles, plains, Andes mountains, 1800 miles of Caribbean coastline, sanddunes, etc, etc.

Equals ... lots of fun travelling in a small country.

BTW, Venezuelan is one of the accents most commonly used to translate movies.

Peru would be cool. I like llamas and alpacas. Those little hats they wear or nifty too. I could pick up some awesome knitting tips.

Isn't Venezuela very dangerous?

I thought that Venezuela and Mexico are the most dangerous countries in Latin America...
