Even if they aren't the ones you might necessarily want to visit at the moment for political/safety reasons, there's much to be said about places in the world with exotic (it depends on what you're used to of course) and interesting wildlife.
The tropics are very diverse in plant and animal life obviously, though the temperate and cold zones are still host to many natural wonders. Do you like the austere ruggedness of the high arctic, the bustling floral and bird life of the Amazon forest, or the herds of hoofed beasts of the savannas?
I used to think Australia, and it's pretty unique. Now, after watching a documentary, I think it's Africa. I did not know that hippopotamuses kill lions that made a bad decision to "snack" on them and that they chase/tip over boats that are in their waters. Then, add the Nile Crocodiles...
A safari is not my idea of a vacation.

Not really a wildlife type of person, i'm a city lover.
I would probably go crazy in most of the African, Latin American and Western Asia countries (not developed enough for my taste/to dangerous).
Canada, USA, Costa Rica, Brazil, South Africa, Australia, New Zealand would be on my list for this.

I could hardly pick one country. The countries with tropical rainforests obviously, Indonesia, Australia, Congo, Brazil, countries with great diversity like the US, China, India, I guess Chile, Argentina, Tanzania, Canada, Japan among others.
