The US has the best culinary diversity in the world but lags on quality compared to other developed countries like Japan or the EU. You can definitely find it but it will cost you.
One huge plus for the US is the ubiquity of authentic Mexican food. I feel bad that Europeans don't have a taqueria every half mile like we do here in the US. Really missing out there.

I liked the Canadian KFC more, but don't remember the fries. I also think it tastes more like the KFC from my childhood (in the US) than the US ones does now especially the mashed potatoes and gravy.
Baltimore's an older city for the US so it has quite a few homegrown dishes like pit beef and its take on crab cakes. Old Bay seasoning is actually from and invented in Baltimore.
