Based on what I know about them, which admittedly is not a great deal since I don't live there so I'm going by documentaries and books I've read, I'm thinking the Australian aborigines and Polynesians are the gentlest people.

I don't know anything about the people of Ghana but as regards people of Canada I don't think they are soft, nice, sweet and gentle by comparison with anyone else, and that's all Canadians including the indigenous aboriginals of Canada (the First Nations and Inuit people).
I actually thought canadians were really peaceful and quiet when I was there, getting accustomed to France was a bit harsh when I came back after almost a year of living there.
Forgiving maybe and jovial, but I wouldn't say Finnish culture is very 'soft'. At least in speech the Danish isn't either.
