About poutine...the biggest failure for many of the places in the USA that TRY to make poutine is the lack of fresh cheddar cheese curds. Those are the crucial thing, along with potatoes that are NOT frozen, and proper meat based gravy.

I think the only places in the U.S. where fresh cheese curds are commonly available are Wisconsin and New York, but I have also seen packaged (not fresh) cheese curds in Ohio and NY supermarkets.
I also saw on a cooking show that there are a handful of restaurants spread around the country that also make cheese curds specifically for the purpose of making 'authentic' poutine, but I would think that is extremely rare.
I used to get poutine as a child everytime I went to Canada. Good memories.
