But, before maybe 500 years ago, weren't most places fairly homogeneous to the extent that there weren't a lot of means for people to get around and "mix it up"? There are lots of homogeneous countries but not all developed as much as western countries did over the past 500 years.

No place has ever been homogeneous, not sure where you got that idea.
500 years ago the world was ruled by giant empires like the Spanish or the French and most humans were at the mercy of invading armies and world travelers from afar decimating the locals with diseases-
In no point in history has there ever been a homogeneous society. Not even south Korea today is homogeneous, despite all of them being culturally Korean. Go back a couple of centuries and Korea was a mixture of cultures working to create the modern Korean culture.
