COS: Employee said it had no been out for more than 4 hours and the inspector demonstrated how to place it in an ice water bath to cool to 41F or below. At end of the inspection it was 37.1F. On ice by the grill, sliced cheese was 51.3F, not maintained at 41F or below. COS: Employee said it had only been out for the lunch rush (less than 4 hours) and placed it back in the reach in cooler. In the make table, salsa (51.7F/51.3F), sour cream (53.1F), homemade ranch dressing (46.3F), and lettuce (50.0F) were not maintained at 41F or below. COS: All items were voluntarily discarded in the trash.
- KDA_4_10111A - --In the backroom storage area, a non-food grade container is storing pasta in direct contact with the plastic. The employee said they have food grade liners and she will fix the issue.
- KDA_4_30111 - --The make table in the salad prep area is not maintaining 41F or below for potentially hazardous foods. Ambient air temperatures were 66.3F and 47.1F. DO NOT USE FOR POTENTIALLY HAZARDOUS FOODS UNTIL IT CAN MAINTAIN 41F OR BELOW.
- KDA_4_60111C - --The whirlpool refrigerator has grease build up on the top. The 3 door cooler (kitchen) has food debris in the bottom and door tracks.
- KDA_5_20411A - --The hand sink by the grill area in the kitchen is not working. The plumbing froze/backed up and they are working on it. The employees are using the hand sink in the warewashing area until the other one can be fixed.
- KDA_5_20515B - --The drain plumbing on the hand sink by the kitchen is disconnected due to backed up pipe/frozen pipe
- KDA_6_20211A - --3 light fixtures in the kitchen area are not shielded.
- KDA_6_50112A - --The water heater vent pipe in the kitchen has dust build up and the fan mounted in the wall behind the water heater has dust build up. There is grease build up on the floor around the grill area.
