  • KDA_3_50118A2 - --In the Frigidaire reach in, there were the following items without date marks: opened package of hotdogs, two metal containers of sliced cooked chicken, two metal containers of shredded cooked chicken, one metal pan of chopped cooked beef and two metal pans of cooked potatoes and beef. All of these items are cooked on site. Employee said, these items were made yesterday morning. They had no stickers on site to label. Employee tried using a marker but it would not work.

  • KDA_3_30211A1a - --In the kitchen's Coke reach in, there was a container of raw pork stored over made on site red sauce. Educated on proper food storage. COS- Person in charge moved the raw meat to the bottom shelf.
  • KDA_3_30412B - --In the ice machine, the ice scoop was stored with the handle touching the ice. Person in charge said they only use ice to put in the make table. Educated on handles needing to be above food. COS-Person in charge placed scoop with handle above ice.
  • KDA_3_50113A - --Sitting out on a prep table was whole pork still frozen. Educated on proper thawing. COS-Person in charge placed pork in reach in cooler.
  • KDA_3_50114A1 - --Sitting on the stove top was a pan of made on site refried beans that was at 140.1F. Person in charge said these beans were made at 10:30AM. Person in charge did not want to keep beans heated to 135F. Person in charge was going to let beans sit on stove for the day. Educated on proper cooling down. COS- Person in charge wanted to discard the refried beans

  • KDA_3_50118A1 - --In the Coke reach in: made on site white cheese sauce did not have a date mark. Person in charge said it was made on Friday.. COS-Person in charge labeled with correct date.
  • KDA_4_10111A - --In the Coke reach in, there were five non food safe containers with the following items in them: rice, ground beef, raw chicken, refried beans, cooked shredded chicken. Under a prep table by the grill there is a non food safe container storing taco shells. Beside the Frigidaire reach in there a non food safe container with tortilla chips stored in it. Person in charge said they do not have any other containers to change them out. He will go get food safe containers tonight.
