After time checked with the manager, allowed to reheat product immediately to at least 135 degree F or above internal temperature to hot hold it at 135 degree or above in the steam table. Hot food items (cooked hamburgers and chicken breasts) held at improper temperatures on the slow burning griddle. Note: Educated the manager about proper holding temperatures and temperature danger zone. After prep time of the products checked with the manager, allowed the improperly hot held products to be iced down and relocated to the reach-in refrigerator to cold hold them at 41 degree F or below at all times.
