Observation: Diced cooked chicken(53F) in a plastic bag inside the mechanical cooler was not cold holding 41F or below. PIC moved the bag into an ice cooler and spread out chicken to rapidly drop the temperature.

Observation: No hand washing reminder sign posted at the hand sink.
- Using a handwashing sink- operation and maintenance
Observation: Debris build up in the handwashing sink basin. PIC cleaned the sink.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: No thermometers available for the coolers.
