This visit was made to conduct a routine food safety evaluation. The Person in Charge was very helpful during the visit. I also observed food employees practicing calibration of their thermometers. Thank you. The following issues require attention:
1. Please ensure that all food employees are washing their hands before putting on new gloves. Employees must wash their hands before engaging in food preparation and any time after possible contamination including: After handling soiled equipment or utensils, During food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing tasks
  • Critical: Handwashing / When to wash hands (corrected on site)
    Observation: Observed a food employee fail to wash their hands before putting on clean gloves.
    Correction: All food employees shall be washing their hands often especially after handling trash, using the restroom, handling raw meats, handling soiled equipment and utensils, before putting on clean gloves, etc. Proper handwashing frequencies will aid in the reduction foodborne illness. Instructed food employee to wash their hands and put on new gloves.
  • Cooling Methods (corrected on site)
    Observation: Observed egg salad cooling in the display case was at 51°F.
    Correction: Time/ temperature control for safety foods prepared from ambient temperature must be cooled from 70F to 41F within 4 hours To facilitate cooling foods from ambient temperature please place food in a shallow pan or container and leave uncovered until temperature has reached 41°F. Please ensure that all foods prepared in the store are cooled to 41°F before placing in the display cases. Egg salad was moved to the Walk in cooler to faciltate cooling.
  • Critical: Hot Holding of Potentially Hazardous Food at 135°F or above (corrected on site)
    Observation: The following food item(s) were measured at improper temperatures: commecially made beef chili soup at the hot bar was at 98°F.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be hot held at a temperature of 135°F or above. Soup was reheated to 165°F and brought back out to steam table.
  • Time as a Public Health Control/ Written Procedures Available (corrected on site)
    Observation: There were no written procedures for using time as a public health control for the fried chicken in containers at self service area but the Person in Charge explained that they are using time and keeping the chicken out for maximum of 4 hours.
    Correction: If time only is used as a public health control for a working supply of potentially hazardous foods (time/temperature control for safety food) before cooking or for ready to eat, potentially hazardous foods that is displayed or held for service for immediate consumption, written procedures shall be prepared in advance and maintained in the food establishment and made available to the regulatory authority upon request. The permit holder should be able to describe the process to the Health Department. Time as a Public Health Control Procedure documents for the fried chicken were provided to the Person in Charge.
  • Critical: Sanitizers, 21 CFR Criteria for Food Contact (corrected on site)
    Observation: Observed concentration of quaternary ammonium in 3 compartment sink was above 400 ppm.
    Correction: Chemical sanitizers shall be used in accordance with the CFR. High concentrations of sanitizer in excess of the CFR requirements can be harmful because residues of the materials remain. Solution was adjusted to be 200 ppm. Please note that concentrations of quaternary ammonium used to sanitize food contact surfaces should be between 100 - 400 ppm.
