Unable to even locate their permit for legal operation. No items were corrected from previous inspections. Follow up required. March 3, 2016.

    Observation: A food service employee was working in the food service establishment without having a valid food service card.
    Correction: A food service employee shall have a valid food service card prior to working in the food service establishment. The person in charge shall not employ anyone to work in the food service establishment until they posses a valid food service card. A food service employee shall have a valid food service card while working in a food establishment.

    Observation: The food contact surfaces of cooking equipment and/or pans were found with encrusted grease deposits and other soil accumulations
    Correction: Food contact surfaces of cooking equipment should be free of encrusted grease and soil.
  • Physical Facilities - Cleaning Frequency and Restrictions (repeated violation)
    Observation: Physical structures in the kitchen areas noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Correction: A food service employee shall have a valid food service card prior to working in the food service establishment. A food service employee shall have a valid food service card while working in a food establishment.
  • Cooling, Heating, and Holding Capacities
    Observation: The 2-door salad make unit is not maintaining a cold-holding temperature below 41 F.
    Correction: (Refrigeration technician notified). Maintain a refrigeration temperature that maintains a cold-holding temperature <= 41 F for the stored foods. Do not store any foods that require time/temperature control for safety in this unit until it is capable of cold-holding foods at or below 41 F.
  • Critical: Pests - Controlling Pests*
    Observation: Live flies observed in the dining room and areas throughout the kitchen.
    Correction: (The pest control operator has been notified) Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Trash and debris observed under the kitchen equipment.
    Correction: Clean under the equipment at a frequency that prohibits the build-up of trash and debris.
  • Mops - Drying Mops (corrected on site)
    Observation: Mop observed sitting in the mop bucket filled with dirty mop water.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
