Observation: Chicken & potato salad in display case and half & half, honey mustard, and mayonnaise in glass door reach in cooler were observed cold holding at improper temperatures.
Correction: The solid shelves in the display case do not facilitate airflow very well, so manager agreed to put TCS food on bottom where it is able to maintain food at 41°F or below. The only TCS food in glass door reach in cooler are dressings and coffee creamer, so manager put these items in an ice bath and will continue to do this until refrigerator is repaired.

Observation: Observed cheese sitting out on counter under no temperature control. Roast beef and turkey in display case refrigerator and thousand island dressing in reach in cooler cold holding at improper temperatures.
Correction: Keep cheese in cooler or on ice - do not leave out except during preparation. Display case refrigerator needs better air circulation (bottom section was okay, but middle shelf was too warm - consider using wire shelves instead of solid shelves to better facilitate cold air circulation). Repair the reach in cooler - ambient air temperature was 42°F and at the lowest setting, ambient air temperature should be around 38°F. Relocate TCS foods to a unit capable of maintaining food temperatures at 41°F or below until it is repaired to inhibit the growth of harmful bacteria.

Observation: Mops not hung up to air dry.
Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
