The purpose of this visit is to conduct a routine inspection. Employee Health Policy in place. Sanitizer observed within acceptable limits. Facility is now using Time as a Public Health Control (TPHC) for the cream cheese minis and cream cheese filled buns of up to 4 hours. EHS instructed the manager to maintain the written procedure for TPHC.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Cream cheese filled minis 62F observed in an ambient room air display case were cold holding at improper temperatures
    Correction: EHS provided options to manager. Manager decided to begin Time as a Public Health Control for cream cheese minis and also for cream cheese filled buns. Manager marked the cream cheese minis with a discard time ao 2pm since they were placed out at 10am. Manager instructed to maintain a copy of the written instructions for review as these are your writte instructions.
