I'm Catholic and I spent 6 months on Kibbutz Maagan Michael. 90% of the practices of most Kibbutzim are the same as they were before the state was founded.
Here are the differences:
No more communal child rearing like the old days. Parents raise their kid in their home.
Pocket money is distributed now, all money used to be forbidden.
Some Kibbutzim have opened non industrial/agrarian businesses but the communal model is still the same
You can work off the kibbutz and reside there as a member, but you give your earnings to the Kibbutz and it becomes part of the communal pot.
Most of the privatization differences are legal status things that don't have much bearing on daily life.
