A friend of mine mentioned his interest in the Ford Lightning but then said that he felt the 320 mile range would be too low. He works from home and his wife's car would be the one primarily used for road trips (not like they do many anyway). It is a reality that 250-300 mile range is more than enough for many people who choose not to get one because they worry about the range.

That is a problem EV makers should work on.
Yeah, one gas/hybrid and an EV in a 2 car household is the way to go.
The best thing to do is to try it out for your needs. Either borrow a friend's EV/PHEV or rent one on Turo for a few a days and give it a whirl. I'll admit that it worked on me. My buddy left his PHEV Ford C-Max at my house while he flew to visit family. I tried out his 20-mile electric range hybrid and realized that 90% of my usage was less than 15 miles and my local EV infrastructure has a ridiculous number of free charging. I went to have my wife's car windows tinted and the owner of the business loaned me his EV SmartCar for the day. I had a blast driving it and soon started researching EVs.
Currently we have a 2013 Fiat 500e for local driving (we don't venture out more than 30 miles from home in it), a 2013 Tesla Model S 85 (free Supercharging and internet streaming), a moderately modified 2001 VW Golf TDI, and a 2006 Chevy 2500HD Duramax. We use the Tesla for road-trips even though the TDI can easily do 700 miles between fill-ups. Sadly, the TDI has been relegated to use when I feel like driving a manual transmission...Torsen plus turbodiesel torque is fun.
95% of our driving is with the EVs, the diesels are getting a long deserved break after logging over 600K miles between the two of them.
One thing that is often discussed here by EV owners, yet I think doesn't sink in for some readers is that once you set up home charging, all of your charging up to a radius of half your vehicle range can be covered by your home charging alone. So if you have 300mi of EV range, your own home charging will handle driving up to 150mi away from home and back. That means that for many owners, it's likely only a handful of trips per year that the public charging network even needs to be visited at all.
Was talking to a guy at work last week and he mentioned the F-150 ... "I have never wanted nor needed a pickup before, but ...." He was talking about battery backup for the house.
Like him, I have never wanted/needed a pickup, but that caught my eye as well. If they are able to spread that to other vehicles, my search starts with those vehicles the next time I am in the market.

A power generator around 7-8 kilowatt would be cheaper. Even a 22 Kw generator (Generac, for example) costs under $6,000. With a 22 Kw you can probably power some of your neighbors' homes along yours, while still charging your EV's battery.
Getting around town I would be fine with most EV's...
...Going on a long drive I'm taking my ICE vehicle for the time being.
When recharge times can accomodate 10% - 80% somewhere between 5 and 15 minutes I could probably go fully EV.
