In Quebec, route 132 between Quebec City and Rivière-du-Loup is very scenic. The small village of Kamouraska is the nicest although much of that stretch is pretty. Further east towards Gaspésie is also nice but that’d make for a much longer trip.
NW New Brunswick is pretty boring. I have tried most possible routes over the years and I haven’t found much of interest between the Quebec border and Fredericton. There is the world’s largest axe in Nackawic, it’s kinda cool. There are botanical gardens somewhere close to Edmundston if you’re into that. The Acadian peninsula (Caraquet etc) can be interesting for the history, but it isn’t as visually appealing as SE Nova Scotia between Halifax and Lunenburg.
I have always liked Fredericton, nice little,city. The area around St Thomas College and the road on the north shore along the river to the east of the city is pretty. In SE New Brunswick the Bay of Fundy is the obvious attraction, Moncton and Shediac are nothing special (the Moncton zoo is great with kids, many kinds of tigers/lions/etc).
As for Nova Scotia, I am sure you have heard about the Cabot Trail, Cape Breton Island as a whole is very scenic. Other than that, Antigonish and its small university is kinda nice, but other than that I haven’t really ever visited much between the NB border and Halifax. Love the coast beyond Halifax though.
